What you get with this HACCP training
With this HACCP training you learn to work safely with food according to the Hygiënecode voor de Horeca, in 14 online lessons, which you each finish with a few questions to test yourself. You conclude with a final exam and download your certificate from HACCP-cursus.com itself immediately after passing.
The training is intended for anyone who works in a kitchen, behind the bar or in their own food and drink business. For € 49,95 you get everything listed below and you start immediately after registration.
14 lessons with testing
At the end of each lesson, you test yourself with a few multiple-choice questions about the entire lesson, with an explanation for each answer. This way you know immediately if you grasp the basics.
Explanation for every question
After grading, you see the correct answer with an explanation per question. You also read why for questions you got right.
Error analysis per topic
After each test you see on which topics you lose points. You get an extra practice session on exactly those topics.
AI teacher watching along
Do you not understand why your answer was wrong? Ask your question at that specific question or topic. The AI teacher knows your answer and explains where things went wrong, based on legislation and regulations.
Testing and exam
After each lesson you test yourself and see the explanation immediately. You take the final exam in exam mode, like a real exam.
Everything online
You work on a phone, tablet or laptop. If you stop halfway through a test, you continue later where you left off.
Who this training is for, even as a volunteer
Do you work with food and drinks, even as a volunteer? Employers, associations and organisers often ask for an HACCP certificate. It is not legally required, but you use it to show that you know the hygiene rules.
Volunteers in sports canteens
Do you help out in the canteen of the football, hockey or tennis club? Many sports clubs ask their volunteers for an HACCP certificate. You arrange that online with this training.
Events and festivals
Are you behind a stall or bar at an event? Organisers often want to see that everyone working with food knows the hygiene rules.
Starters in hospitality
Are you starting in a kitchen or behind the bar soon? Then you already know the basics on your first working day.
Volunteers at associations
Do you cook at the scouts, in the community centre or at another club? Working safely with food is important there too and the board sometimes asks for a certificate.
Food trucks and market stalls
Do you sell food from a food truck or at the market? You learn how to cool, keep warm and prevent cross-contamination, even if you have little space.
Entrepreneurs and managers
Do you have your own business? Then you learn what your employees need to know and how you show that you work safely with food.
What the Warenwet requires of you
The Warenwet and the European hygiene regulation (EC) 852/2004 require every food business operator to work with fixed procedures based on the HACCP principles. The responsibility for safe food lies primarily with that entrepreneur.
In the hospitality industry, you comply with this by working according to the Hygiënecode voor de Horeca from KHN or with your own food safety plan. A certificate is not required. However, the entrepreneur must instruct and train his employees in food hygiene, suited to their work, and be able to show that this has happened.
The NVWA supervises and often visits unannounced. An inspector can also ask employees questions about what they know. This HACCP course ties in with that. You learn the rules so that you can explain and apply them, and your certificate shows that you have completed the course.
Tip: If you are employed, give your employer a copy of your certificate for the training administration. This allows the business to show that you have received instruction on safe working.
How the lessons and the HACCP exam are structured
The course consists of 14 lessons and a final exam. At the end of each lesson you test yourself with a few questions about that lesson, the final exam covers the material of all lessons combined.
There is no time limit on the final exam. You take it in exam mode and only see what was correct afterwards, so you notice whether you really know an answer or still have to puzzle it out. If you fail, you take it again, at no extra cost and as often as necessary as long as you have access.
The questions are checked and updated to the current rules and the learning objectives of the course.
Where students stumble when they obtain their HACCP certificate
Most mistakes happen with questions where two concepts look alike, or where you have to apply a rule to a situation in the kitchen. Isolated facts usually go well.
Reading helps little with these types of questions. You learn by practising, making mistakes and seeing immediately why. After grading, you get an explanation for every question, and the error analysis shows whether you lose points mainly on temperatures or on concepts. If you still have doubts, ask the AI teacher. It knows your answer and points out the flaw in your thinking.
Do you want to see what such a question looks like first? Then start with the free HACCP test.
These are questions where many people in the training get stuck.
- Is a process step a CCP, an AKP or an AP? A CCP is measurable, you control an AKP with instructions and an AP is facilitating.
- With a food infection you get sick from living pathogens, with food poisoning from toxins that microorganisms have produced.
- Cooling down must be to 20 °C within 2 hours and to 7 °C within 5 hours. If you mix up those numbers, you choose an answer that is almost correct.
- With product liability from Burgerlijk Wetboek Boek 6, the injured party must prove damage, defect and the connection between them. A well-kept HACCP administration helps to refute a claim.
Tip: When you make a mistake, also read the explanation for the answers you did not choose. That often contains exactly the difference you need for the next question.
Getting your HACCP certificate in four steps
You start immediately after registration and work at your own pace, on the device you have at hand.
- 1Start with the introductionIn the Introduction to HACCP you learn who is ultimately responsible, what the NVWA does and what seven principles HACCP has. All other lessons build on that.
- 2Test yourself after each lessonTake the test after each lesson. If you get something wrong, read the explanation and try again until everything is correct.
- 3Eliminate your weak pointsUse the error analysis and the extra practice session on your weak topics. On your dashboard you see which topics are already strong.
- 4Take the final examCheck your dashboard to see if there are any weak topics left. If everything feels good, take the final exam and download your certificate immediately after passing.
After passing, your HACCP certificate is ready online
If you pass the final exam, you download your certificate immediately. It shows that you have completed the course and that you know the basics of working safely with food according to the Hygiënecode voor de Horeca.
After that, it is about applying it on the shop floor. Think of checking a delivery with a calibrated thermometer, or keeping records that you keep for at least six months according to the hygiene code. If you have forgotten something, open the lesson again or present your question to the AI teacher. You have access to the training for 180 days.
